This savoury version of the classic dessert makes a delicious and filling main course.
Ingredients
225 ml Milk
1 Bay Leaf
1 Clove of Garlic, chopped
2 Cloves
Pinch of Ground Nutmeg
300g White Bread, crust removed
1 small Onion, finely chopped
1 Egg
1 Egg White
100g Spinach
100g Colston Basset Stilton
20g Butter
Salt and Pepper
To begin, pre-heat the oven to 160ºC. Then place the milk, onion, garlic, bay leaf, cloves and nutmeg into a large saucepan. Bring to the boil (without letting the milk boil over) and then reduce to a simmer. After 5 minutes, take off the hob and fold in the diced white bread. Whisk up the egg and add to the mixture followed by the egg white. Mix together thoroughly, then add the Stilton. Once the cheese has melted into the mixture, fold in the spinach. Season well with Salt and Pepper.
Line a suitable baking dish with greaseproof paper and brush with a little melted butter. Pour in the mixture and smooth out with the back of a spoon.
Place in the pre heated oven for around 30 minutes and check with a knife. If the knife comes out clean, the pudding is cooked. If not, pop it back in the oven for another five minutes.
Serve with your choice of green vegetables and roasted nuts – delicious and nutritious!
