Ingredients include:
- 3 Egg Yolks
- 60g Anchovies
- 50ml Vegetable oil
- 50ml Olive Oil
- 2 cloves Garlic, peeled
- Worcester Sauce
- Tabasco
- Salt & Pepper
- 2tablespoon White Wine Vinegar
- 1 Cos Lettuce
- 50g Parmesan shavings
- 1 Ciabatta (frozen)
- Crispy Bacon or ham (optional)
Method
To make the dressing, first place the egg yolks, garlic, vinegar and 50g of the anchovies into an electric blender. Blend until fully incorporated. then slowly pour in the vegetable and olive oil a small amount at a time while continuing to blend. if the mixture becomes too thick, just add a few drops of water. Once all the oil has been added, season with a splash of Worcester Sauce and a few drops of Tabasco.
For the croutons, take the ciabatta from the freezer and let it stand for 2-3minutes. Cut it into nice thin slices, place on a baking tray and drizzle over a little olive oil. Season with a sprinkle of sea salt and bake until crisp.
To serve, cut the Cos lettuce to your liking and place in a mixing bowl, then coat with the Caesar dressing and the shaved Parmesan. Place this in a serving dish along with a few anchovies, the crispy bacon (if you opted to include it) and the croutons. perfect!
